Tasty and Easy Recipes!

Yummy, and easy toffee
1 sleeve Saltine crackers
1 stick butter
1 cup brown sugar
2 cups chocolate chips

On a baking sheet, spread out Saltine crackers. Melt butter and brown sugar in a saucepan over medium heat until gooey. Pour over crackers and bake at 350 degrees for five minutes, or until bubbly.
Remove from oven and sprinkle chocolate chips on top. Let sit for a few minutes until chocolate chips begin to melt. Then, spread over crackers evenly with a spatula.
Stick in the freezer for an hour, or until chocolate hardens. Break into small pieces and put into gift containers or baggies. Store in the freezer until ready to eat or give away.

Southwest Chicken Soup
3-4 Boneless Chicken Breasts
Chicken Broth
1 bag Frozen Corn
1 can Black Beans
1-2 packets Taco Seasoning

Boil chicken breasts is chicken broth until tender (use broth according to taste, and how much liquid you would like for soup). When cooked, shred with fork. Add taco seasoning, corn and beans. Simmer and enjoy! Great topped with shredded cheese, sour cream, green onions or tortilla strips!

Almost Lasagna

1 pound elbow macaroni (or other similarly shaped pasta-like small shells) cooked
1 pound ground turkey (or beef, chicken, sausage or tofu crumbles -- whatever works for you)
2 eggs
1 pound ricotta cheese
1/2 cup grated Parmesan cheese
salt and pepper
1 jar spaghetti sauce: 24 - 26 ounces
2 cups shredded mozzarella cheese
2 cup or so veggies (e.g. diced zucchini, matchstick carrots)

Directions

1. Brown meat and drain well, if necessary.
2. While meat is cooking, stir together eggs, ricotta, grated Parmesan and salt and pepper.
3. Mix cooked meat, macaroni, sauce and veggies. Add ricotta mixture and blend well.
4. Coat a 9x13 baking pan with cooking spray or olive oil and spread half of macaroni mixture evenly over the bottom. Top with a cup of mozzarella and a healthy sprinkle of grated Pamesan. Add the remaining macaroni mixture and top with another cup of mozzarella and another sprinkle of Parmesan. Cover with foil.
5. At this point the whole thing can go into the refrigerator to be cooked when you're ready.
6. Heat your oven to 350 degrees F and bake the casserole for 20 minutes. Uncover and bake for another 10 to 20 minutes until the cheese on top is lightly browned and bubbly.

2 Cups of Your Favorite Pancakes Batter
6 Breakfast Sausage Links, cooked
Accompaniments: maple syrup or honey
1. Preheat oven to 350 degrees.
2. Place 1 tbsp of the pancake batter into greased mini muffin cups.
3. Cut the sausage into 1 inch pieces and lay flat side down in the center of each batter filled muffin cup.
4. Top sausage with another tbsp of batter in each cup.
5. Bake for 14 minutes.
6. Remove muffins from molds and poke popsicle sticks through the muffins.
7. Serve with desired accompaniment.

Italian Turkey Sliders

Italian Turkey Sliders with Honey Dijon Mayo

Sliders are very popular right now and this version made with ground turkey and baked rather than fried is not only good, but good for you. My kids ate these like there was no tomorrow and even the pickiest of them finished his plate without a complaint. Served with baked Parmesan fries this was the perfect 'fast food' meal and the cost per slider is about 45 cents - that's good, too.
Hands-On Time: 10 minutes
Ready In: 20 minutes
Yield: 16 servings
Ingredients
    Sliders: 20 ounces lean ground turkey 2 Tablespoons grated Parmesan cheese 1 clove garlic, minced 1/2 teaspoon each dried basil and oregano 1 teaspoon salt pepper to taste 16 dinner rolls or slider rolls Honey Dijon Mayo: 1/3 cup mayonnaise 1 Tablespoon honey dijon mustard
Directions
  1. Combine ground turkey, cheese and all seasonings. Mix together well.
  2. Shape turkey into 16 small patties.
  3. Place patties on a greased baking sheet.
  4. Bake at 350 degrees F for 8 - 10 minutes or until cooked through. Be careful not to cook too long or they will become dried out.
  5. Combine mayonnaise with honey Dijon mustard and stir until well blended.
  6. Place on rolls and top with Honey Dijon Mayo.
Hot Dog Pie
  • 4-6 Servings
  • Prep/Total Time: 30 min.

Ingredients

  • 1/2 pound ground beef
  • 4 hot dogs, cut in half lengthwise and sliced
  • 1 can (16 ounces) baked beans
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 2 ounces VELVEETA Pasteurized Prepared Cheese Product, cubed
  • 1 unbaked deep-dish pastry shell (9 inches)
  • 4 slices American cheese

Directions

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the hot dogs, beans, ketchup, brown sugar, mustard and cheese cubes. Cook and stir until cheese is melted.
  • Meanwhile, prick pastry shell with a fork. Bake at 400° for 10 minutes. Fill with hot beef mixture. Cut each cheese slice into four strips; make a lattice topping over pie. Bake 5-10 minutes longer or until cheese is melted. Yield: 4-6 servings.


  • Homemade Graham Crackers


    (Makes A LOT, depending on the shape you cut them in)
    1 Cup Whole Wheat Flour
    1 1/2 Cups All Purpose Flour
    1/2 Cup Dark Brown Sugar, packed
    1/2 Tsp Salt
    1 Tsp Cinnamon
    1 Tsp Baking Soda
    1/2 Cup Butter, chilled & cubed
    1/4 Cup Honey
    1/4 Cup Water
    1. Preheat oven to 350 degrees.
    2. In a food processor or mixer combine the first 6 ingredients.
    3. Add cubed and chilled butter to the mix and pulse/mix until it resembles coarse meal.
    4. Add honey and water and continue to mix until it all combines.
    5. Remove and shape the dough into a flat disk and place between two pieces of parchment paper.
    6. Roll dough out until 1/4 inch thick. Cut into crackers or shapes.*
    7. Place cookies on a Silpat or parchment lined baking sheet and bake for 15 minutes.
    8. Cool and serve.
    *To Freeze: After step 6, place the cut out cookie shapes on a baking sheet and freeze for 20 minutes. Remove, place in a Ziploc bag, label and freeze for up to 4 months. When ready to bake, follow steps 7-8.
    ** If you have no Whole Wheat, you can use 1 Cup Oat Bran to 2 Cups AP Flour instead of what the recipe calls for and it works perfect!
